Birria Quesa Tacos

The kind that require two napkins minimum. Braised short rib, crispy consommé-dipped tortilla, white onion, cilantro. Worth every minute.

Beef Mexican Weekend Cook
Ingredients
  • Beef short ribs3 lbs
  • Dried guajillo chiles6
  • Dried ancho chiles3
  • Beef broth4 cups
  • White onion1 large
  • Garlic cloves8
  • Roma tomatoes3
  • Corn tortillas12
  • Oaxacan cheese2 cups
  • Fresh cilantro1 bunch
  • Mexican oregano1 tbsp
  • Bay leaves3
Steps
  1. Toast dried chiles in dry pan until fragrant. Soak in hot water 20 min, then blend with tomatoes and garlic.
  2. Season ribs generously with salt, sear on all sides until deeply browned.
  3. Add chile sauce, broth, onion, oregano, bay leaves. Braise covered at 325°F for 3 hours.
  4. Shred beef. Reserve consommé broth for dipping.
  5. Dip tortillas in consommé, pan fry, add cheese + beef, fold and crisp both sides.
  6. Serve with consommé for dipping, fresh onion and cilantro on top.
